Ingredients:
- 1 lb. spicy Italian sausage
- 1/2 lb. smoked bacon, chopped
- 1 qt. water (4 cups)
- 2 - 14.5 oz. cans (about 3 2/3 cups) chicken broth
- 1/2 head cauliflower, chopped
- 3 garlic cloves, crushed
- 1 medium onion, chopped
- 2 cups chopped kale or Swiss chard
- 1 cup (1/2 pint) heavy whipping cream
- salt and pepper, to taste
- Parmesan or Roman cheese, to sprinkle on top
Directions:
- In a skillet, over medium-high heat, brown sausage, breaking into small pieces. Drain and set aside.
- In a skillet, over medium-high heat, brown bacon. Drain and set aside.
- Place water, broth, cauliflower, garlic, and onion in a pot. Over medium-high heat, bring to a simmer. Cook for about 5 minutes, or until the cauliflower is tender.
- Add sausage and bacon to pot. Simmer for 10 more minutes.
- Add kale or Swiss chard and cream to pot. Season with salt and pepper and heat through.
- Serve with cheese, for sprinkling on top.
